KETO CINNAMON ROLLS


Ingredients

For the dough:

1 cup (75 g.) Grated mozzarella cheese
1 cup (100g.) Almond flour
1 tablespoon cream cheese
1 large egg
1 tablespoon of Erythritol
For the filling:

2 teaspoons of erythritol powder
1 tablespoon ground cinnamon
1 tablespoon of water
1 teaspoon of butter at room temperature
For the frosting:

½ cup cream cheese like Philadelphia (with a minimum 25% fat)
1 teaspoon vanilla extract
2 teaspoon Erythritol
Instructions

Place the mozzarella cheese and cream cheese in a glass bowl (microwaveable). With a spoon spread the cream cheese over the mozzarella cheese as best you can. Put this mixture in the microwave at 20-second intervals, remove, mix again and heat. Repeat this procedure until the cheese is completely melted.

When the cheese mixture is fluid, incorporate the egg and the almond flour; You can do it with a fork or knead directly with your hands. You will get a soft, mouldable dough that will peel off the edges.

On parchment paper or a silicone mat, stretch the dough, you can use a roller, although it is very easy to stretch it with your hands; trying to form a rectangle. The final thickness of the dough must not exceed 5 mm.

Using a kitchen brush, paint the entire surface of the dough with the butter.

Then in a small bowl or a cup mix: the sweetener, cinnamon and water. Place this mixture on the surface of the dough and distribute evenly. You can use a kitchen brush to make this procedure easier.

For the longest part of the dough, roll it on itself until it is completely closed.
Proceed to cut the roles with a sharp knife. It is ideal to mark the dough at similar intervals, about 2 cm is an ideal measure.

On a small baking sheet, previously buttered, place the rolls and bring to the oven for about 20 minutes at 180 °C / 350 °F or until the surface is browned.

Remove from the oven and let stand. Meanwhile, mix all the frosting ingredients with a hand blender. Serve the roles and drizzle with the frosting to your liking.
